Us working people know all about the crock pot. The easiest way to come home to a house that smells good,and not have to stress about dinner, just scoop out the food, toss a salad and voila, dinner is served!

I mainly throw in a pot roast, chicken, or sausage before I head off for the day. But that is getting a little boring, although still delicious. So today I went looking for something a little different, and I think I will try this out over the weekend, so that I have time to make something else if I don’t like how it turns out.

 Ingredients 2   10- to 12-ounce packages frozen winter squash puree,thawed 1/8 teaspoon ground nutmeg 1 32-ounce container ricotta 1 5-ounce package baby spinach (6 cups) kosher salt and black pepper 12 lasagna noodles (about 3/4 of a 16-ounce box) 8 ounces mozzarella, grated (about 2 cups) green salad, for serving Directions In a medium bowl, mix the squash and nutmeg. In a second bowl, combine the ricotta, spinach, ½ teaspoon salt, and ¼ teaspoon pepper. In the bottom of a 5- to 6-quart slow cooker, spread ½ cup of the squash mixture. Top with 3 of the lasagna noodles (breaking to fit), half the remaining squash mixture, 3 lasagna noodles, and half the ricotta mixture; repeat, ending with the ricotta mixture. Sprinkle with the mozzarella. Cook on low, covered, until the noodles are tender, 3 to 4 hours. Serve with the green salad, if desired.

Ingredients

1 cup “lite” coconut milk, (see Tips for Two) 1/4 cup lime juice 2 tablespoons brown sugar 1/2 teaspoon salt 8 ounces chicken tenders 4 cups shredded romaine lettuce 1 cup shredded red cabbage 1 cup sliced snow peas 3 tablespoons minced fresh cilantro 2 tablespoons minced red onion

Instructions

Step 1 – Preheat oven to 400°F. Step 2 – Whisk coconut milk, lime juice, sugar and salt in an 8-by-8-inch glass baking dish. Transfer 1/4 cup of the dressing to a large bowl; set aside. Place chicken in the baking dish; bake until cooked through, about 20 minutes. Step 3 – Meanwhile, add lettuce, cabbage, snow peas, cilantro and onion to the large bowl with the dressing; toss to coat. Divide between 2 plates. Step 4 – Transfer the chicken to a cutting board and thinly slice. Arrange the chicken slices on top of the salads. Drizzle 1 tablespoon of the coconut cooking liquid over each of the salads.

Happy Thanksgiving to you and your Loved Ones!!

On Thanksgiving, we eat too much, and we eat things we normally wouldn’t. So this year, here at Bonne-Foi, we went out to look for an appetizer that would be tasty, but not too fattening and also satisfying. I must confess, you can follow this recipe, or you can take a short cut and purchase a pre-made Olive Tapenade..

Ingredients 1 cup kalamata olives, pitted (about 4 ounces) $ 1 cup green olives, pitted (about 4 ounces) 1 tablespoon chopped fresh flat-leaf parsley 1 tablespoon capers, rinsed and drained 2 teaspoons chopped fresh thyme 1 teaspoon grated lemon rind $ 1/4 teaspoon freshly ground black pepper 10 oil-cured olives, pitted (about 1 ounce) $ 3 canned anchovy fillets (about 1/4 ounce) 1 garlic clove, chopped Preparation

Combine all ingredients in a food processor; pulse 10 times or until olives are finely chopped.

Summer time is over, despite the heat wave we have experienced here in Orange County, you can still smell a whiff of autumn in the air first thing in the morning. Just because the weather will eventually become cooler and crisper don’t stop using your sunscreen.  And remember that the cooler air will also be drier, and that means keeping your skin hydrated is even more important than it was during the summer.  

Drink plenty of water, and please, only use soap on your body, never on your face. Soap is very drying and can cause damage to the delicate skin on your face. Bonne Foi has a great Facial Cleanser that will clean your face, but is very gentle on your skin. And using our Night Time products to gently exfoliate while you sleep will help your skin stay soft and smooth.

Once every couple of weeks, mix up a concoction of either coconut oil and granulated sugar, or olive oil and sugar and give your body a soothing scrub down. This will help to exfoliate your skin, while leaving a thin film of oil that will keep you feeling silky all over.

 

For the cooler weather, it I also good to switch to a heavier, creamier skin moisturizer to protect your skin from the dryin effects of winter wind and cold.  The thicker, more oily cream creates a barrier that will keep water in, and the cold dry air away from your skin. And don’t forget your lip balm, or gloss. Nothing makes you look less healthy and vibrant than dry, cracked lips.

From Martha Stewart’s Website, here is a great morning brunch meal that won’t load you up with too much heavy food, but it will still look and taste yummy. Give it a try, let us know if you like it!!

 

INGREDIENTS 1 tablespoon extra-virgin olive oil 1 bunch scallions, thinly sliced (1 cup) 2 cups grape tomatoes Coarse salt and ground pepper 8 large eggs, lightly beaten 1/2 cup grated cheddar (1 1/2 ounces) COOK’S NOTE The frittata will appear to be mostly liquid on top when you transfer it to the oven, but as long as the edges are set, the eggs will finish cooking evenly. DIRECTIONS STEP 1

Preheat oven to 425 degrees. In a 10-inch ovenproof nonstick skillet, heat oil over medium-high. Add scallions and tomatoes, season with salt and pepper, and cook about 5 minutes. STEP 2

Add eggs and cheese, season with salt and pepper, and stir to combine. Cook, undisturbed, until edges are set, about 2 minutes. Transfer skillet to oven and bake until top of frittata is just set, 10 to 13 minutes. STEP 3

Invert or slide frittata onto a plate and cut into 6 wedges. Serve warm or at room temperature.

At Bonne Foi, our company is located in one of the most famous beach cities there is, Huntington Beach, CA. For some people of a certain age who grew up in the surf generation, it is also known as Surf City USA!

When you live in a beach city, there are people all around you who take full advantage of the good weather and the almost year around ability to swim, surf, jog and just walk along the beach. For years the big manufacturers of of vitamins and supplements and even the medical profession have been touting the benefits of vitamins and minerals. At Bonne Foi, although we don’t dispute the importance of vitamins and minerals, we know that those vitamins and minerals benefit you more when they come from fresh, pesticide free fruits and vegetables.

Apples and broccoli will do more for your skin than a tablet from a bottle. The fish oil in a piece of fresh salmon will do plenty to keep your mind sharp and your skin soft and clear of wrinkles. Green Tea and is another source of anti-oxidants that will help not only with skin and hair, but also with weight loss. Grape seeds extract, coconut oil and coconut water all have great benefits for your skin and health. One of the very best ways to keep your skin looking beautiful and smooth is Olive Oil. Instead of butter, use olive oil for cooking, on your bread, and you can even spread a light layer of it on your feet and legs at night to keep your skin soft and smooth.

At Bonne Foi, Olive oil is one of the ingredients in our skin care line. No matter what the various studies say, it is always best to do things in moderation. Never take more than the recommended dosages for any vitamin or nutritional supplement. Too much of a good thing is never a good thing.
